Wan’t to know the EASIEST and CHEAPEST breakfast meal prep recipe of all time? EGG CUPS.
They are the best thing ever. Because they literally take 10 minutes to make, are healthy, and super cheap.
- 1 carton of large eggs of your choice
- Little bit of milk of your choice
- 1.5 cups of veggies of your choice
Other things you’ll need on hand:
- Coconut Oil or Cooking Spray
- Salt and Pepper
- Mixing Bowl
- Whisk or fork
- Cupcake/Muffin Tin
Turn oven on 350.
Heat coconut oil to liquid (5 seconds in microwave).
Rub coconut oil on 12 cup muffin tin.
In large mixing bowl include 12 eggs, finely chopped veggies (I used peppers, and a small tomato), splash of milk, pepper, and other spices to taste and mix well.
After thoroughly mixed, distribute evenly into muffin tin
Then, bake for 10 minutes or until eggs puff at the top, then remove and let cool.
That’s IT! Then you have 12 cups or 6 meals (2 cups = 1 red protein container or serving and 1/2 serving of veggies). Goodman and I do this when we are meal prepping on Sunday and then choose 3 days during the week to have egg cups for breakfast.
Store in ziplock bag or tupperware container in the refrigerator. Top with hot sauce or salsa and enjoy!
